My new favorite in terms of potato salad !!!

  • 10 medium potatoes, boiled and cut into cubes
  • 5 hard boiled eggs
  • 1 small red onion
  • 1-2 celery stalks, finely chopped
  • mayonnaise
  • mustard
  • salt
  • pepper, freshly ground

Servings: 1

Preparation time: less than 60 minutes

RECIPE PREPARATION Potato salad with eggs:

Cut all the ingredients into small pieces.

Oriental salad & # 8211 my mother's recipe. It is a potato salad with onions, olives and boiled eggs, very dear to Romanians. Dressing is very important because he is the one who seasons the whole dish.

Oriental salad it can be a kind of stand-alone or a garnish (along with steaks). I think every family has their own recipe for Oriental salad (as of beef salad). Some put pickles in it (cucumbers, donuts), others do not put boiled eggs. I make oriental salad more than Easter, along with Romanian honey steak and I don't put eggs in it anymore.

Here you will find a simplified recipe (without eggs and olives) & # 8211 potato salad with onion. A simple garnish or a very tasty kind of fasting.

This year my husband had a terrible appetite for oriental salad and asked me to make him one of them & # 8221.

I asked my mother how she makes it and she gave me this recipe: with eggs, olives and red onions. Her dressing was simple made of vinegar, salt, sugar, a little water and oil. Well, I've been doing it for a few years another dressing room which I like extremely much and which fits perfectly in this salad: a jar dressing. In the ingredients box you will find both options.

Besides the fact that I use mustard, a little honey and lemon juice (instead of vinegar) I used only olive oil. You can also use sunflower oil.

For years I have been buying and using olive oils (or those from oilseeds) from Costa d & # 8217Oro and I am very happy with them. Each has its own specific characteristics: some are for salads and cold dishes, others are suitable for cooking (steaks, dishes).

The quantities in the recipe are for 4 people and are indicative & # 8211 you can change the ratio between the ingredients depending on the taste (eg less onions, more olives or boiled eggs etc.

Potato salad with mascarpone and eggs

I've been wanting to tell you about this recipe for a while. I did it by chance, after Easter, when I noticed that I had a few red eggs left that I didn't feel like eating as such. So I planted a potato salad over which I placed sliced ​​eggs. To somehow tie the salad, I used mascarpone. I didn't want to use mayonnaise & # 8211 I can't stand mayonnaise and in combination with egg it seems devastating to my liver. Mascarpone is a very creamy cheese, obtained from sour cream with the addition of lemon juice (citric acid in our time). You can make mascarpone at home, it's no big deal if you have fatty cream, fresh and as little processed as possible. See below a short video about how to make it at home.

Let's go back to the recipe though. In addition to the mascarpone, I also brought together the potatoes, some red eggs left over from the Easter table, radishes, green onions. For flavors I used parsley and a little hot olive oil.

I cleaned and boiled the potatoes and boiled them in salted water. In the meantime I took care of the preparation of the other ingredients. Respectively, I cut the eggs into rounds (a special accessory for this job helps a lot), I sliced ​​the radishes and I chopped the green onion and the parsley.

In the bowl where the salad was to sit, I mixed the parsley with the mascarpone.

When the potatoes were boiled, I took them out in a sieve and poured cold water over them: I wanted to stop them boiling as soon as possible and to cool them a little so that I could put them over the mascarpone. So, when they were just a little warm, I added them over the cheese.

I mixed and added the rest of the ingredients, with a little coarse salt and pepper to taste, all sprinkled with olive oil.

I preferred to put the egg slices on the plate, so as not to crumble and mix with the whole salad.


Potato salad with eggs and ham

Ingredients for the recipe Potato salad with eggs and ham:

  • 500 grams of boiled potatoes and peel
  • four hard boiled eggs and finely chopped (eggs can also be cut into slices)
  • 200 grams of pressed ham, cut into cubes
  • a bell pepper, diced
  • 150 grams of sour cream
  • a teaspoon of sweet mustard
  • a teaspoon of grated horseradish
  • a teaspoon of salt
  • a powder of white pepper

Preparation for the recipe Potato salad with eggs and ham:

Mix all the ingredients and pour over the sauce consisting of sour cream and horseradish, mustard, salt and white pepper. The recipe can be sprinkled with lettuce and parsley leaves. Good appetite!

Recipe of the day: Potato salad with eggs

Potato salad with eggs from: potatoes, eggs, onions, mayonnaise, sour cream, vinegar, sugar, salt.

Ingredient:

  • 2 kg of potatoes
  • 4 boiled eggs
  • ½ onion, peeled and chopped
  • ½ cup mayonnaise
  • ½ cup of sour cream
  • 1-2 tablespoons of vinegar
  • ½ teaspoon of sugar
  • salt to taste

Method of preparation:

Bring a large pot of water to a boil. Peel a squash, grate it and squeeze the juice. Add the potatoes to the water and cook for 5-10 minutes. Drain and cool to room temperature.


Meanwhile, peel boiled eggs and cut into slices. Keep a few slices aside, chop the remaining egg and add over the potatoes.


In a large bowl, combine potatoes, egg, chopped onion, mayonnaise, sour cream, 1 tablespoon vinegar, sugar and salt to taste.

Transfer to a serving bowl, garnish with egg slices and refrigerate for 2 hours.

5-6 hard boiled eggs, 2 raw eggs, 1 tablespoon mustard, 3 tablespoons flour, 1 lemon, 1 red onion, 1 bunch green onion, 4-5 boiled potatoes in shell, a few sprigs of parsley, 50-60 ml oil, 3-4 tablespoons vinegar, 100 ml yogurt or sour cream 12%, salt, pepper to taste, 2-3 radishes, cucumbers, peppers, a few olives, as desired.
