Ingredients for making a squirrel cake

Cooking cake "Squirrel":

Step 1: Cook the dough.

First, separate the egg yolks from the proteins. Put the latter in the refrigerator. Beat butter softened at room temperature with sugar until white. Then add the yolks to the resulting mass, introduce them one at a time. Keep whipping. After that, add sour cream and pre-chopped walnut kernels. Now slow down the mixer speed up to one, gradually pour the baking powder for the dough, then cocoa powder and flour, previously sifted through a fine sieve. Remove the squirrels from the refrigerator and beat with 1 tablespoon of powdered sugar. Beat until white foam, then add 0.5 teaspoon of lemon juice and whisk about 1 minute. Now, at the same whipping speed, gradually introduce the protein mixture, in about 3 doses, into the flour.

Step 2: Bake the biscuit.

Pour the finished dough into a baking dish, previously well-oiled with butter and lightly sprinkled with flour. Subsequently, it will help to more easily separate the cake from the mold. Preheat the oven up to 200 degrees, place the cake form on the middle level of the oven so that it browns on all sides. Bake it for 1 hour. You can check the readiness with a toothpick or an ordinary match. Just stick the biscuit in the middle, in case the cake is ready, the toothpick will remain almost dry. Remove the finished biscuit from the oven, cool slightly, remove from the mold and cut into three equal parts, as shown in the picture.

Step 3: Prepare the cream.

Beat most of the available cream, approximately 350-400 ml to solid peaks, then a little slow down and, a little bit, add condensed milk until a homogeneous mass is formed. Lubricate the cake and the sides of the cake with the finished cream.

Step 4: Cook the icing.

Soak gelatin in 50 grams of clean drinking water. Heat the remaining cream, but do not bring to a boil, then dissolve the gelatin in them. Add slices of chocolate, mix well until chocolate is completely dissolved. Then the icing should cool well, then pour it on the cake, evenly distribute.

Step 5: Serve the Squirrel Cake.

As a decoration for the cake, you can use grated white chocolate, crumbs from cookies or some nuts. Imagine and decorate at your discretion. Let the cake brew In one hour, and then serve at the festive table or just as a dessert. Good appetite!
