Step 2: Cooking Chocolate Dough for Cookies ...

Choose a container for cooking - it can be either a deep bowl or a medium-sized pan. We mix flour, chicken egg, half of the available granulated sugar and salt, cocoa powder and butter. We mix the components with a tablespoon or a culinary spatula, and then with our hands we begin to knead the dough until it becomes smooth and elastic. Happened? Wrap a lump of dough in a cling film and put it in the refrigerator for cooling for 45 minutes.

Step 3: Prepare the basis for meringues.

While the dough is cooling, we will prepare a “dough” for meringues. We need, and this is important, a clean and dry bowl or pan - enameled, glass or ceramic. In aluminum dishes, the squirrels will darken, and our meringue will lose its appearance. Pour the already separated proteins into a suitable container and begin to whip in a steep and thick foam using a mixer or blender. To whisk the whites better, add the rest of the salt to them. Gradually pour granulated sugar into the protein mass and continue whisking at high speeds. It is necessary that the sugar is completely dissolved. When the base is ready, you can go to the next step.

Step 4: Roll out the cookie dough.

When the specified time has passed, we take out the dough from the refrigerator and put the lump on a table sprinkled with flour or another rolling surface. We pick up the rolling pin and roll the dough into a thin layer. The thickness of the rolled dough sheet should be about 3 millimeters. Now we’ll take a look at the shape of the future cookies - you can use special molds, and if you don’t have them, then take an ordinary glass, put a neck to the dough and push it - you get a beautiful and even circle that can be easily separated from the layer.

Step 5: Cook the chocolate meringue cookies.

Turn on the oven to preheat it up to 170 degrees while we’ll do it ourselves while assembling cookies. We will cover a baking sheet with a special parchment for baking so that the fruits of our work do not burn. We spread the formed dough on the parchment, observing a small distance between the future cookies - it will creep a little when baking. In order to grease the meringue cookies, we need a pastry syringe or bag. You can use an ordinary plastic bag - put the protein base inside, cut off the tip of the bag and gently squeeze a small amount of meringue into pieces of dough. It will turn out neatly and beautifully. Bake cookies in a preheated oven for about 15 minutes.

Step 6: Serve the finished chocolate meringue cookies.
