Cooking a light soup with kefir dumplings:

Step 1: Cook the broth.

To make kefir dumpling soup, we need chicken stock. For its preparation, we can use any chicken meat, be it fillet, breast, chicken drumsticks or another part of the bird. Thawed and chopped meat should be thoroughly washed under running water, or left in water for 15 minutes. After that, you need to collect water in a saucepan and put the meat. Water should completely cover the chicken. You need to cook the broth over low heat for an hour. Do not forget to salt it to taste. Periodically you need to remove the foam with a slotted spoon. Since the preparation of the broth takes a fairly long period of time, we advise you to cook it in advance. Because it will take you about 30 minutes to make kefir dumpling soup with prepared broth. Ready broth needs to be filtered.

Step 2: Cook the vegetables.

Potatoes need to be washed, peeled and cut into small slices. Carrots are also thoroughly washed, peeled and cut into narrow circles. Bring the broth in a saucepan to a boil, add cooked vegetables to it and cook the ingredients over low heat.

Step 3: Cook the kefir dumplings.

Pour kefir into a small bowl. Then it must be repaid with soda. To do this, add baking soda "at the tip of a knife" to kefir and beat with a whisk or fork with technical movements until a light foam appears. Add the egg to the resulting mixture and squeeze out a pre-peeled garlic clove there, salt a little. Mix thoroughly and begin to slowly pour the sifted flour into the bowl, constantly stirring. The consistency of the dough should be the same as for pancakes or as fat sour cream: moderately thin and not too tight.

Step 4: Add the dumplings to the soup.

When the vegetables in the soup are ready, we should start adding kefir dumplings to the soup. To do this, we need a small spoon and a bowl of cold water. You need to moisten a spoon in water, grab a little dough and dip the spoon in a boiling pot with broth. When the dumpling comes loose from the spoon, we again wet the spoon and grab the dough. It is necessary to wet the spoon, otherwise the dough will pester, and the shape of the dumplings will not turn out beautiful. Dumplings are cooked for just a few minutes. Their readiness can be literally seen: they double in volume and pop up pots.

Step 5: Serve a light soup with kefir dumplings.

When the dumplings are ready, add to the pan, finely chopped parsley, salt and pepper to taste. Serve hot to the table. Easy and tasty dumpling soup is ready! It can be consumed with crackers. Enjoy your meal!
