Making Lemon Cupcake:

Step 1: prepare the dough.

Let's start, as usual, with butter and sugar. Butter should be at room temperature. Knead it in good faith with sugar, add vanilla sugar, zest with half a lemon and a tablespoon of lemon juice. All this must be turned into a homogeneous mass. Zest can be conveniently chopped using a regular grater. And juice - just squeeze out the remaining pulp. Of course, in modern conditions it is more convenient to obtain a sugar-oil mixture using a mixer. But mothers, for the most part, had no mixers. So, if you want to follow traditional technology - then use a spoon or a whisk. If you want it easier and faster - the mixer will help. Next, we add eggs to the resulting mixture one by one, mixing everything thoroughly each time. The turn came to flour. Do not get tired of repeating: it must be sifted to saturate it with oxygen. Add baking powder to dry flour and mix thoroughly. Are you done? Pour it a little there in the mixture, knead the dough. It should turn out plastic, the smallest sticky to the touch.

Step 2: put the dough in a baking dish.

Different forms are available, both in form and in the material from which they are made. What you have is not significant. Lubricate it with butter, dump the dough. On top you can sprinkle with some nuts, peanuts, for example.

Step 3: bake a cupcake.

And now - in the oven. The temperature inside it should be about 170 degrees. The cake will be baked for forty minutes. In the end, you can check the readiness with a match or a toothpick. The crust is likely to crack on top. It should be so.

Step 4: serve.

We dump the finished cupcake from the mold. Let it cool down a bit, in the hot baking process it continues for some time. And now - on the table. Enjoy your meal!

Recipe Tips:

- - Zest can be used more. It will turn out even tastier.

- - In the dough for flavor, you can add a little cognac.

- - You can bake in small tins. But in this case, keep cupcakes in the oven less.
