Through it, we filter the egg white in a bowl, and grab the yolk on the upper half of the egg shell. Usually, several strands of protein lag behind the shell poorly, so with a fork we separate them from the shell and put them in a bowl with the protein ingredient. We transfer the yolk from the second half of the shell to another clean bowl. This procedure needs to be done with each egg. It's important to know: so that the egg ingredients beat well, the bowls in which we transfer the yolk and protein separately, as well as the container where we beat the protein, must be clean and dry.

Step 4: prepare the dough.

Pour the proteins from the bowl into the mixer bowl and add sugar with a tablespoon. Sugar is added to the proteins gradually, one tablespoon each. Turn on the mixer at high speed. At the beginning of whipping, the protein becomes bubbly. Then you need to turn off the mixer and again add one tablespoon of sugar to the proteins in the container. Beat the protein again at high speed. At this time, the protein acquires a fluffy white color. This process is repeated until the required amount of sugar is used up. Soon, the protein will become more dense, smooth and uniform. We check the quality of the process: if solid peaks appear and the protein mass does not flow from the tilted dishes in which it is located, then the protein is ready. It is important to ensure that when whisking reaches the bottom of the container and whips the entire volume of protein. Using a tablespoon, add the yolks one after the other into the bowl with whipped proteins, and vanilla sugar. We continue to whisk everything at high speed. Our mass acquires a yellowish color due to the yolk and continues to harden. After that, we reduce the speed of the mixer and gradually add flour to the mass from the glass. We mix everything well with a whisk of the mixer at low speed until a homogeneous state of the test. The dough in consistency becomes like thick sour cream.

Step 5: make a biscuit with apples.

Lubricate the bottom and sides of the baking dish with butter and using a tablespoon pour the dough from the container into the mold. We spread apple slices on the surface of the dough so that they do not touch the sides of the form. We heat the oven to a temperature 180 ° C and put the dish form in the oven. Baked cake 35 - 40 minutes. And you can check the readiness of the biscuit with a toothpick. It is important to stick it in the dough, and not in apple slices.
