What is the basic Rice Krispie Treat Recipe?

  • The basic recipe calls for melting butter and marshmallows together then stirring in Rice Krispies Cereal, then pressing it into a pan before cutting it into squares or rectangles but the trick is to get the perfect balance of those ingredients.
  • Too much cereal and the treats are dry, too many marshmallows and the treats are overly sweet and sticky. Not enough butter and the treats taste bland.

Flavored Wraps

You don't have to go the takeout route to enjoy wrap sandwiches flavored wraps are easily made at home.

  • 3/4 cup (138g) potato flour or 2 1/2 cups (138g) dried potato flakes
  • 3 cups (361g) King Arthur Unbleached Bread Flour
  • 1/2 cup (113g) water
  • 1/4 cup (50g) vegetable oil
  • 1/2 cup (113g) spinach, puréed, or 1/4 cup (56g) tomato paste mixed with 1/4 cup (57g) water
  • 1 teaspoon (6g) salt
  • 1/4 teaspoon instant yeast

Weigh your flour or measure it by gently spooning it into a cup, then sweeping off any excess. Whisk together the potato and bread flours. Add the water and oil and mix well. Add the remaining ingredients and stir until the mixture forms a ball.

Turn the dough out onto a well-floured surface and knead it until smooth and elastic. You may do all of this in your bread machine, if desired. Program for manual or dough, and cancel after the first knead.

Refrigerate the dough for 1 hour (or overnight).

Transfer the dough to a lightly floured work surface. Divide it into eight equal pieces.

Working with one piece at a time, round the dough into a ball, then roll it until it's very thin, about 1/8" thick.

Dry-fry the dough rounds on a hot, ungreased griddle for about 2 minutes on each side. The dough may puff a little, but will become flat again as it cools. As each wrap finishes cooking, transfer it to a wire rack to cool, stacking one wrap atop the other to keep them soft and pliable.

Store the wraps in a plastic bag or airtight container at room temperature for up to 5 days, or freeze them for up to a month.

Domestic Goddess's Recipe Box

Butter the inside of one 13x9x2-inch cake pan, then set the pan aside.

In a large stock-pot, melt the 5 tablespoons of butter over very low heat. (Whenever I make rice krispie bars, I use an 8-quart Teflon coated stock-pot.)

After the butter's melted in the pot, add the miniature marshmallows, and stir until the marshmallows have completely melted.

Remove pot from the heat, add the cereal, and stir until the cereal is evenly coated with the marshmallow mixture.

Press the marshmallow/cereal mixture into the buttered pan.

Let bars sit for 2-3 hours, before cutting them.

Note: The actual fruity flavored rice krispies cereal I used to make these bars were. Malt-O-Meal Fruity Dyno-Bites, which I purchased from Wal-Mart. I also subbed Malt-O-Meal Crispy Rice Cereal for the Kellogg's Rice Krispie Cereal as well.

Strawberries & Cream Crispy Rice Bars

Mix It Up: Line a 9-by-13-inch pan with foil and spray with cooking spray. In a large pot, melt the butter over high heat. Add the bag of marshmallows and 1/2 tsp. salt and, using a silicone spatula, stir until smooth. Remove from heat. Add the cereal and mix until evenly coated. Mix in the remaining 2 cups marshmallows, stirring just until incorporated but not melted. Mix in white chocolate chips and freeze-dried strawberries.

Top It Off: Transfer the cereal to the prepared pan. Spray a clean spatula with cooking spray pat the cereal into an even layer. Top the warm treats with 1/4 cup freeze-dried strawberries. Let cool for 2 hours. Cut into squares.

Chocolate Rice Crispy Treats Ingredients

The ingredient list here is short! Here’s what you’ll need:

  • Brown rice cereal (gluten-free)
  • Coconut oil
  • Unsweetened cocoa powder
  • Salt
  • Mini marshmallows (vegan or regular)
  • Unsweetened almond milk
  • Vanilla extract

Brown rice cereal

While brown rice cereal has more nutritional benefits than the widely known white rice cereal, brand name Rice Krispies are not gluten-free.

While brown and white rice are naturally gluten-free, it is the malt flavoring in Rice Krispies and other brands that gluten becomes added. Check your labels before purchasing to ensure your cereal is gluten-free.

Coconut oil

Using coconut oil in this recipe keeps things dairy-free. While any type of coconut oil is fine to use, refined coconut oil is flavorless.

Unsweetened cocoa powder

Instead of using chocolate flavored rice cereal, unsweetened cocoa powder gives these gluten-free treats a rich chocolate flavor without added sugar.

Mini marshmallows

Depending on the dietary needs in your household, regular or vegan marshmallows are the sweet binder that brings these treats together! When using vegan marshmallows, I love using Dandies brand.

How to Make Toffee Bars

  1. The butter, brown sugar, and egg get mixed together until it is light and fluffy.
  2. Mix in the flour and vanilla until it is well combined.
  3. Press into a greased pan until it is an even layer. Then just bake until the edges are golden.
  4. Once it is baked immediately sprinkle over the chocolate chip and place back in the oven (it should be turned off) and let it sit for 5 minutes for the chocolate to get soft.
  5. Spread the chocolate evenly over the bars and then sprinkle with your toppings.
  6. Let the bars sit at room temperature for a couple of hours until the chocolate is set or place in the fridge if you are in a hurry.

Fruity Pebbles Cereal Treats Video

Pro Tips:

Do not smash the cereal into the pan.

Do not overheat your marshmallows.

  • If you rush the process of melting the marshmallows by cranking up your heat, you will overheat the sugar in the marshmallows, turning that sugar into hard candy, and your treats will be hard.
  • Heat the marshmallows and butter on low heat! It takes some time for them to melt, but your patience will be rewarded as you will have ooey, gooey, chewy treats.

Use FRESH marshmallows.

Grease everything!

  • Grease your saucepans, bowls, spatulas, and even your hands with either butter (my preference) or non-stick cooking spray to keep the marshmallows from sticking.
