Mix in a bowl the melted butter with the milk, sugar and almond essence, add the flour and knead a soft and non-sticky dough by hand. Sprinkle a little more flour if the dough still sticks. Form a ball of dough and put it in plastic wrap, let it cool for 15 minutes.

Almond Biscuits: So Good They Can Be Addictive!

Ingredient:

- 180 grams of almonds (I had 130 grams and topped with 50 grams of nuts)
- 250 grams of flour (I used wholemeal flour)
- 125 grams of butter (flakes, small pieces)
- 200 grams of brown sugar
- 3 small or 2 large eggs
- 2 teaspoons of baking powder
- 1 pinch of salt
- a little grated lemon peel (I used limette, preserved with sugar)
- a few drops of almond essence (to a great extent!)


Preparation

Biscuits are made extraordinarily simple:

First, put the almonds in the preheated oven at 180 degrees for 5 minutes. Remove, allow to cool and rub lightly between the palms, so that part of the peel will fall off. (What's left, it's goodbye!) Put the almonds in the robot:

Add butter, sugar, lemon peel, flour mixed with baking powder to the food processor and mix for a few seconds. When the food in the robot looks homogeneous, add beaten eggs with salt and 1/2 teaspoon of almond essence. Mix until a homogeneous dough is formed.

The dough obtained will be quite sticky. Divide into two, on two plastic sheets (I used two sheets of baking paper) and with their help shape both parts of the dough into a cylinder with a section diameter of about 4 cm. Wrap in plastic or baking paper and refrigerate the packages for an hour.

After an hour, turn on the oven and set it to 175 degrees Celsius.

Remove one cylinder at a time, adjust its shape, rolling it, while it is packed, on the work surface, then unpack it and cut 7-8 mm slices. thickness, which is placed on a tray covered with baking paper:

Put the tray in the oven, and after 15 minutes remove and turn the biscuits with the face on which they were on the tray up (the reddest are those already turned):

Continue baking for another 10-15 minutes, until nicely browned:

Kourabiedes - Greek Almond Biscuits

1. Preheat the oven to 180C. Using an electric mixer, beat the butter with 100g of powdered sugar in a large bowl until it becomes pale and fluffy.

2. Meanwhile, spread the almonds in a pan and leave in the oven until lightly golden (3-4 minutes). Set aside to cool a bit, then cut into small pieces.

3. Add the egg yolk and ouzo or brandy to the butter mixture until smooth. Gradually add the flour and almond mixture and combine to form a dough. It may be necessary to knead lightly by hand.

4. Line your hands with flour. Roll out the dough and cut into semicircles. Spread the biscuits on a tray lined with baking sheets. Bake for 15-20 minutes until lightly golden.

5. Remove the biscuits from the oven, sprinkle lightly with orange blossom water. Powder with sugar, then allow to cool completely before serving.

Melt the butter in a saucepan, then let it cool for about 5 minutes.

Separately in a bowl put whole eggs, powdered sugar, vanilla essence and quenched ammonia, mixing until the sugar melts well and will double in volume.

Put the warm butter, stirring constantly, until it is well incorporated into the egg foam.

We mix the flour with the fried and finely chopped almonds with a spatula, until the whole composition is homogenized and a dough hard enough to be shaped by hand is obtained.

We leave the dough in the bowl and put it in the fridge for one hour, to strengthen better and be easy to work with.

In the meantime, we will prepare the tray from the stove, which we cover with oil and flour.

We take the dough out of the fridge after the allotted time, then we form hand-shaped balls in the shape of a coin (50 bani), flattening them.

We place biscuits thus formed in the lined tray at a distance of 2-3 cm, one from the other.

Put the tray in the preheated oven at 190 degrees for 15-20 minutes (until the biscuits turn golden).

Biscuits with almonds and jam

The beauty of these cookies lies in the fact that you can make them in any size and you can fill them with any jam or cream you want.

Put the flour and almonds in a food processor or blender and mix them together until the almonds are finely chopped. Mix them with salt and baking powder.

Beat the butter and 100g of sugar with the mixer for 4 minutes until you get a cream and the sugar dissolves. Add the egg and vanilla and mix for another 4 minutes. Lightly incorporate the dry ingredients.

Put the rest of the sugar in a bowl. Form balls of dough the size you want. If the dough is too sticky, put it in the fridge for 20 minutes. Roll each ball through the sugar in the bowl and place them on trays lined with baking paper.

Finger press in the middle of each ball to flatten it slightly and form a hole.

Bake the biscuits for 12-14 minutes until golden brown and put them to cool on a grill. Fill each hole with your favorite jam or lemon curd.

1. Preheat the oven to 190C. Wallpaper a tray with baking sheet.

2. Put the egg white in a bowl with the powdered sugar and beat with a fork.

Mousse with chocolate chip cookies and almonds

A gourmet dessert, easy to prepare. After a few attempts you will be able to execute it with the mastery of a confectioner.

Combine milk, chocolate and instant coffee in a bowl and microwave for a total of 45 seconds until the chocolate melts. Homogenize and add 1 tablespoon of liqueur.

Whisk the egg whites. Mix half the amount of sugar with 2 tablespoons of water and a pinch of salt in a pot and boil them until you get a syrup. Gradually mix the syrup obtained in the beaten egg whites, mixing until you get a strong foam like meringue. Gradually incorporate the foam into the chocolate mixture.

Divide the composition into 6 small bowls, cover with cling film and refrigerate for at least 2 hours. Place the biscuits on a baking sheet, sprinkle the chopped almonds on top of them and melt (for 3 minutes) the sugar to pour over the biscuits. Let it harden for 5 minutes.

Serve the mousse in ice cream cups with a crunchy cookie.
