Trigons with salami


Well, this recipe, I found it in the puff pastry;) I had to try it;) and I adapted it according to the ingredients I had in the fridge.

  • puff pastry approx. 400g,
  • ketchup,
  • oregano,
  • raw salami 100g,
  • Delaco cheese 100 g,
  • egg 1 piece,
  • Flaxseed.

Servings: 9

Preparation time: less than 15 minutes

RECIPE PREPARATION Tramione with salami:

Spread the puff pastry with ketchup, then arrange the salami pieces, taking into account that the squares will be cut. Sprinkle with oregano and grated cheese. Cut the squares, then each square closes like a triangle. Grease the wheat with beaten egg, sprinkle with flax seeds, then bake in the preheated oven for about 15 minutes over medium heat.


Appetizer roll with Salami and Cheese

Put the ingredients in the bread machine in the following order: lard, salt, sifted flour, yeast greased with sugar and dissolved in warm water. Set the dough program.

If you do not use a bread machine, proceed as follows: grease the yeast with sugar and dilute with a little warm water. Pour in the sifted flour.

Add lard, salt and little by little the rest of the warm water.

Knead quickly (about 5 minutes) a smooth dough, which comes off the bowl and hand.

Shape it into a ball, place in a bowl, cover with plastic wrap and leave to rise for about 2 hours, in a warm place away from currents or until it doubles in volume.

Spread in a rectangular sheet on the lightly floured work surface. Sprinkle evenly cubes of salami, grated cheese and crushed Telemea cheese. Roll into a roll, close the ends tightly and transfer to a tray lined with baking paper.

Put in the preheated oven, for about 30 minutes, at 190 degrees or until the roll is cooked and nicely browned.


Baked minced meat

I had saved Laura Laurentiu's meat burek recipe for about half a year, but I must confess that it wasn't to be, because, when I had stocked up on everything I needed, the surprise! The package of pie sheets in the freezer, which I relied on, turned out to be actually dough (obviously my fault). Therefore, I had in front of me the composition of burek and a dough with which I had to make something. I respected exactly the proportions of the ingredients, I did not add mineral water and I obtained a very tasty composition with which I filled these trine. I devoured them hot, along with a glass of easy-to-drink yogurt. What was left for the next day I heated them on the grill in the oven so as not to stay cold in the middle. They do not use microwaves, although they heat up faster. In the first picture, you can see in the Christmas tree in the background and the lemon biscuits that decorated the tree.

INGREDIENTS
1/2 pack of dough for pastry
300 g minced beef + pork (I only used beef)
150 g onion
2-3 tablespoons of oil
salt
pepper (I used Garlic, part of the prize from Brandusa and the Spice Shop)
aromatic herbs to taste, I put 1/2 teaspoon of:
& # 8211 dry thyme
& # 8211 two good tablespoons of sweet pepper paste Universe Laura uses ajvar pepper paste you can replace with paprika
1 or
50 g sour cream
1/2 tablespoon gray

PREPARATION Chopped minced wheat
1. Defrost the dough and secure a baking tray with baking paper.
2. Put 2-3 tablespoons of oil in a non-stick pan and cook the onion until it becomes glassy.
3. Add and cook the meat + spices and a little salt, stirring constantly, it should not be cooked too much, only until it turns light in color, the blood coagulating.
4. Add the pepper paste or paprika.

5. In a small bowl beat the egg and then beat it with sour cream until smooth. Mix with semolina. Pour the composition over the meat mixture and cook over medium heat, stirring constantly
until the egg coagulates and the filling does not leave the juice, without drying it excessively.

6. Preheat the oven to approx. 200 degrees
7. Spread the sheet of dough on the worktop and divide it into 9 equal squares. Put a spoonful with the tip or more of the meat, as much as you can, grouping it on one of the halves to then fold and thus obtain a trine.
8. Press the formed triangle with your fingers or the tip of a fork on the two machines so that it adheres side by side and does not fall apart when baked.

9. Transfer to the tray as you pack the wheat.
10. Bake them at a temperature of approx. 200 degrees or whatever you know is good for the pie. Check after 20 minutes. It took me about 30-35 minutes for them to brown.

Traditional dishes from Transylvanian cuisine, presented by over 20 students of the Faculty of Agriculture, from USAMV Cluj-Napoca

"Journey in the traditional Romanian cuisine", a traditional event at USAMV Cluj-Napoca, will be organized on Friday, May 28, with the participation of 22 students from the fourth year of Engineering and Environmental Protection (Faculty of Agriculture).

The event will be hosted, as in the years before the pandemic break period, by the Biodiversity Research Center, on the USAMV Cluj-Napoca campus, and will bring together traditional dishes from many areas of Transylvania, prepared by participating students from Discipline Control and certification of traditional products.

“It will be an initiatory journey into the gastronomic past of our students' home villages to discover the old-fashioned taste of the cuisine of their parents, grandparents and ancestors, to save from oblivion an exceptional peasant culinary heritage. We guarantee you an authentic journey that will delight your sensory taste buds in a unique tasting recital from Cluj to Mureș, from Alba to Maramureș, from Harghita to Sălaj! You will relive bits of joy from your childhood that will reconnect you for a moment, with a world long forgotten! ”, Explained Assoc. Prof. Dr. Avram Fițiu, the coordinator of the traditional project.

Among the recipes that the students will delight the audience with are marzipan horseradish, goose boiled with paprika and garlic, mutton stew with cheese, onion and dill tails, sorrel zamak or Toplița aliens.

All products will be judged by three experts in traditional gastronomy, and for a few hours students, teachers and enthusiasts of the history of Transylvanian cuisine will enjoy sharing a unique experience.

The event will take place between 10.00 - 17.00, in compliance with the sanitary measures in force.

Boiled salami - a delicious homemade sausage!

The salami we buy commercially is most often prepared with chemicals, substitutes and inferior meat. It is said that certain salamis that we find in stores are made from leftovers, to which are added E's and food additives, in order to have a smell and an appearance that will attract the customer.

Although there are also good salamis in stores, the option of preparing such a product at home seems a good idea. We can enjoy it for breakfast or as an appetizer.

ingredients

- 2 kg of upper leg of chicken (mass indicated for boneless meat)

- 2 tablespoons ground sweet red pepper

- 1 tablespoon ground black pepper

- 1 tablespoon garlic powder

- 1 tablespoon of dried basil

- salami coating (polyamide membrane for salami, size 60 mm)

Method of preparation

1. Peel the chicken from the bone and clean it of the skin. From the bones boil a soup, add a little allspice to it. Strain the soup and refrigerate.

2. Divide the beef into two halves. Put the fattest through the meat grinder together with the skin from the chicken legs. The other part of the meat, as well as the boned chicken, cut it into cubes of about 2 cm.

3. Mix the minced meat with the diced meat. Add the honey and stir.

4. In a dry bowl mix the salt with the spices, add this mixture to the meat. Gradually pour the cold soup and mix the minced meat well.

5. Fill the salami wrapper with the meat mixture obtained. Arrange the minced meat as densely as possible so that there is no air. Tie the ends tightly. If there is air somewhere, however, stick this place with a needle.

6. Hang the salami stick on a support and let it sit for 1-2 hours at room temperature.

7. Boil the salami at a temperature of 80-85ºC, gradually raising the temperature for 1.5-2 hours (depending on the diameter of the salami).

8. Cool the boiled salami under a stream of cold water. Hang it in a cool room for at least 8-10 hours. Wrap it in paper and refrigerate.

Instead of salami: meat bread & # 8211 very tasty!

A wonderful meat dish with simple ingredients that is so easy to prepare. The recipe is convenient during the week, because you can serve it as hot food, and after it cools, as a snack instead of salami. The meat bread is very tasty!

INGREDIENT:

& # 8211 1-1.2 kg of meat (any or fish)

& # 8211 2 pumpkins (500 gr) or other vegetables to taste (cabbage, cauliflower, broccoli, carrots, beets, spinach, celery)

& # 8211 30 gr of salt (I used plain salt and nitrite salt 50:50)

& # 8211 any spices (I used 1 teaspoon of smoked paprika, ½ teaspoon of ground coriander, black pepper).

METHOD OF PREPARATION:

1. Cut the meat, onion and zucchini into pieces and pass them through a medium-sized meat grinder.

Advice. You can also use minced meat, and chop the vegetables with a blender or as you see fit. The onion has a spicy taste, and the zucchini makes the bread tender and juicy. You can combine various vegetables or you can add green peas, whole grains.

2. Add salt, spices and eggs, then mix until smooth and until the mince becomes slightly viscous, as for meatballs (so the bread will cut well).

Advice. You can use the mixer with hook paddle, the food processor or the planetary mixer with paddle for tender dough.

3. Grease the baking tin (12 * 22 cm) with oil, add the mince and smooth the surface.

Advice. Use whatever shape you have at hand.

4. Bake in the preheated oven up to 240 ° С for 20 minutes, then set the temperature to 160 ° С and bake the bread for another 50-60 minutes.

Advice. If you reduce the portion, then the baking process will take less time. This technology makes the bread stick to the surface, then it bakes very well inside. Thus, most of the juices will be kept inside.

Let the bread rest in the form for 10-15 minutes, then you can serve it. If you prepare it as a snack, then let it cool in the form and in the removed juice. The bread has a delicate and elastic texture, it is juicy, tasty and filling.
